Ingredients

  • 3-4 boneless, skinless chicken breasts (1.5 - 2.5 lbs)
  • ½ cup honey
  • 1/3 cup soy sauce
  • 1/3 cup onion, diced
  • ¼ cup ketchup
  • 2 tbsp vegetable oil
  • 4 minced garlic cloves (3-4 tsps of already minced garlic from a jar)
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ cup water
  • 3 tsp cornstarch
  • Optional: Quinoa, rice, and/or vegetables.

Instructions

  1. Place the chicken in the pot.
  2. Salt and pepper the chicken.
  3. Mix the honey, soy sauce, onion, ketchup, oil, and garlic together in a mixing bowl.
  4. Pour the mixture over the chicken.
  5. Put on the lid and set to high pressure for 15 minutes.
  6. While this is cooking mix the cornstarch and water together.
  7. Perform a quick release when the timer goes off.
  8. Open the lid and remove the chicken.
  9. Add the cornstarch to the mixture in the pot.
  10. Press the Saute button and stir for roughly 5 minutes.
  11. Cut up the chicken and add it back into the pot ( or just pour the sauce over the chicken later ).**

Serving Suggestions

  • Quinoa ( I normally have a big bag of this from Costco. )
  • Vegetables with teriyaki sauce.

Notes

** The sauce is pretty sweet, so allowing people to add the sauce to their liking is a good approach versus mixing it all together.
