Ingredients

  • ½ cup popcorn kernels
  • 2 tbsp vegetable oil (or extra virgin coconut oil)

Instructions

  1. Turn on the Instant pot and press ‘saute’, then press the ‘adjust’ button to turn up the heat to ‘more’. Let the pot pre-heat until the display reads ‘HOT’.
  2. Add 2 tbsp of to the pot, add the half cup of popcorn kernels.
  3. Stir and spread the kernels evenly over the bottom of the Instant pot.
  4. Place a glass lid over the Instant Pot. Any Large lid will do; even a splatter screen would likely work, although I haven’t tried one.
  5. It might take around two minutes for the corn to start popping as it heats. I’ve had them shoot out of a 6 quart, because I was being too slow though!
  6. Let the popcorn pop until the popping slows to one pop every 15 seconds, shake the pot and let any uncooked kernels pop.
  7. Remove the lid and using an oven mit or dry towel, pour the freshly popped popcorn into a serving bowl.
  8. Mix in melted butter and salt, or your favorite seasoning blend.
