1-3 lbs chicken, frozen
1 cup of chicken stock

  1. Add the stock and chicken to the pot.
  2. Set the Instant Pot timer to 20 minutes on high.
  3. When the timer goes off do a quick release.

All chicken was over 200 degrees and very easy to shred.

I normally buy the 10 lb bags of Foster Farms frozen chicken at Costco and do three at a time. Some of the pieces are huge, so I have to add another 5 minutes of cooking time.

I used to buy fresh chicken, divide it up, seal it, and freeze it. However, it ends up it one block like the picture below, so it was cooking unevenly for me. I gave up on this approach.

I also don’t use the rach to keep the chicken from sticking to the bottom, because it doesn’t matter and the rack is a pain to clean in my opinion.
