Ingredients

  • 3 pounds red potatoes
  • 4 tablespoons olive oil
  • 2 tablespoon minced garlic
  • 2 tablespoon dried parsley, minced
  • ½ teaspoon salt
  • Cracked pepper

Instructions

  1. Preheat the oven to 425 degrees.
  2. Wash, scrub, and pat dry the potatoes.
  3. Slice them into roughly ½ inch chucks.
  4. Add the potatoes to a mixing bowl with the olive oil, garlic, parsley, salt, and pepper; toss until the potato slices are evenly covered.
  5. Spread the potatoes evenly on a baking tray.
  6. Roast the potatoes in the oven for 45 minutes to 1 hour; until browned and crisp. After 25 minutes flip them with a spatula in order to help with even browning.

Notes

  • The exact cooking time needed will depend on the thickness of the potato chunks.
  • Italian seasoning, red pepper flakes, etc. can also be used to vary it up a bit.
