1 tablespoon olive oil
16 oz spinach fresh
1 tbsp lemon juice
Salt and pepper


  1. Heat olive oil in a skillet on medium heat.
  2. Add the spinach, a large handful at a time. Add more spinach to the pan as the spinach begins to wilt.
  3. When all of the spinach is in the pan cook it uncovered for roughly 1 minute constantly stirring. Sautee spinach uncovered just enough to wilt all of it. DO NOT overcook.
  4. Remove the pan from heat and cover with a lid. Leave it covered for 3 minutes.
  5. Take the lid off and stir in the lemon juice. You can taste it as you add in the lemon juice to ensure that it is to your liking.
  6. If desired add a little salt and some pepper.
